Minced Pie

     


                             Minced Pie (Filling Recipe)



      Who said we can't have minced pies before Christmas today I made this minced pies .I used my buttery crust ,and the filling was really easy to make .And one thing you don't need so many variety of dried fruits, to make this incredible minced pie filling.,Use whatever available fruits you have in your house , If you don't have fresh orange you can substitute marmalade preserve or jam its perfect for this minced pie filling. So,you can enjoy minced pie even  Christmas has a long way to go .,but still you can have a feast for this little cute pies ever ,,  everyday is  Christmas day.'Try this mini pies , perfect for tea time , or even dessert.

                         '' MINCED PIE FILLING'

  INGREDIENTS

                 3 Gala apples ( cut into small cubes )
                 1 cup dried prunes  ( cut into small cubes)
                 1 cup golden raisins
                 1/2 cup orange marmalade
                 1/2 cup white sugar
                 1/2 cup light or dark corn syrup
                 2 tbsp dark rum
                 3 tbsp ruby port ( or brandy)
                 2 tbsp Cointreau( any brand or orange liquor)
                 2 cups cranberry juice ( or orange juice )
                 1 tsp cinnamon powder
                 1 tsp allspice


PREPARATION
           
           In a large sauce pan , combined all the 12 ingredients , cook in a moderate heat , stirring every 15 minutes . Cook pie filling for about 1 1/2 hour. Cool filling completely before filling in into prepared pie dough. For minced pie dough you can use regular pie dough for easy convenient cooking.




Note: In this recipe I used ruby port because it enhanced and gives more flavor to the fruits . I also used orange marmalade with this recipe, because marmalade is already concentrated taste of  orange , I also made my own marmalade so I have faith on it to add to  this minced pies filling.


Serving : 30 to 40 mini pies      Preparation time : 15 min     Cooking time: 1 1/2 hour
