Add a twist in your apple muffins ,to make more delicious and mouthwatering impression.Here in this recipe I made my own almond topping, crunchy on the top, and muffins are moist and soft, not to sweet just enough to blend with the topping .
So try making this muffins , its very easy to make this recipe .Make your simple muffins into special one.

Ingredients:
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1  1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 Tbsp cinnamon powder
  • 1/2 cup butter softened
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3/4 sour cream or all purpose cream
  • 2 cups diced fresh apple (peeled)
  • 12 cupcakes paper cups

Baking time:
Preheat oven 175 C or 375 F
Prepare the muffin pan ,fill in the paper cups.
In a medium mixing bowl combined all dry ingredients using wire whisk mix it well.
In a large mixing bowl, cream butter and sugar until fluffy,add eggs one at a time.Add vanilla, then add the half of the dry ingredients ,slowly pour the half of the sour cream,then add the remaining flour mixture,then sour cream.Fold in the diced apple to the batter mixture until well combined.
Fill in  the 12 muffins paper cups.
Bake it for 20 minutes, then take it out from the oven, topped with almond butter , and sliced almond , Put it back in the oven ,then bake it for another 5 to 8 minutes.


Homemade Almond Butter
  1. 1/2 cup ground almond (crumbly ) not to fine
  2. 1/2 cup butter softened 
  3. 1/2 cup brown sugar
  4. 1 egg plus 1 egg yolk

In a medium size mixing bowl, cream butter and sugar , until fluffy then add the eggs whisking , then add the almond .Ready for future use.
Leftover almond butter can be stored in the freezer for 2 weeks .

Here is my Caramelized Fried Banana, recipe.If you are a fan of 'banana' then you will enjoy this sweet. satisfying snacks or even for dessert. There is nothing more you need this yummy sweet banana, it does not required a lot of ingredients, well anyway its obvious its only banana, and sugar.

All you need is find this kind of banana called''''''MUSA (SABA) it has a little bit difference between the regular banana, but saba is mostly used for cooking .Anyway you can find this in the supermarket.

Ingredients:
  1.  Saba-5 pieces 
  2. 1/2 cup brown sugar
  3. canola oil for frying 
Cooking time:
  1. Heat frying pan.Make sure the oil is hot before frying.
  2. Peel off banana skin,and cut into two .
  3. Fry banana until lightly browned .Set aside.
  4. Now here is the trick how to caramelized very quick in one pan.Do not turn off the fire.While the oil is still hot add the sugar ,wait until sugar is melted do not stir,then add back the fried banana into frying pan with a low fire.
  5. Stirring slowly until all the banana is coated with this melted sugar. (be careful hot oil plus melted sugar is extremely hot).
  6. Transfer caramelized banana into your prepared plate.ENJOY


#TIPS#
  • Use canola oil for frying 
  • Recommended to eat it while is freshly made.
  • Do not use over ripe banana, it will absorbs to much oil.
