Try this apple tea cake that will satisfy your afternoon tea , its fluffy, light ,and surely
you can still taste the freshness of apple into the filling ,and topping .
Prepare your favorite afternoon tea, and enjoy and have this country homemade apple
cake.You can't resist the newly baked apple cake in your snack time .
Here is what you need to make this::;
- 2 cups all purpose flour
- 1/1/2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 stick of butter softened
- 1 cup sugar
- 2 eggs
- 1 cup sour cream
- 1 tsp vanilla
- 1 tsp brandy
For topping and filling:
- 4 Gala apples
- 1/4 cup brown sugar
- 1 Tbsp flour
- 1 tsp cinnamon powder
- 2 Tbsp sliced almond ( optional)
Baking time;
Set oven temp at, 175 C -325 F
Sliced apple into 1/4 inch thick .Put sliced apple into large mixing bowl then add the brown sugar,
flour ,and cinnamon stir to combined .Set aside for filling and topping .
Greased 8 or 9 inch springform round baking pan .
In a medium mixing bowl, combine all dry ingredients well.
In a separate mixing bowl , cream butter and sugar until fluffy and light,then add eggs one at a time . add vanilla extract ,brandy. Add the dry ingredients to the batter mixture , then adding little by little the sour cream until well combined don;t over mix.
Assembling the cake ;
Divide the batter mixture into two portion, pour one portion of batter into baking pan,on the top arrange apple mixture about half of the apple mixture, then pour the rest of the batter on the top of the apple , then arrange the rest of the apple for topping , sprinkled almond sliced on the top .
Baked for 50 to 60 minutes(I baked mine for 60 minutes . until lightly browned)
Using toothpick or knife inserted into your cake until you see it comes out clean .
Transfer it into cooling rack let it rest for about 5 minutes , then removed it from the baking pan carefully.
Cake can be eaten room temperature, or warm, if you prefer to eat it with whipping cream or sweetened cream your choose will be the best, but me .I prefer it to eat without cream,
This cake will be unrefrigerated for about 3-4 days covered with plastic wrap or airtight plastic container,
Or u can freeze it , just defrosted it and have it warm into microwave , if you prefer,

Cake are better to eat especially when its freshly made,
If sour cream is not available , just substitute this (1 cup of fresh milk add 1 juice of lemon for instant sour cream)<
