Cabbage and Apple Green Salad with Lemon honey Dressing

                                                                 ' Cabbage '


          Cabbage is ,mostly used in everyday cooking in Asia , We used a bunched of cabbage for our mixed vegetable dish  for everyday meal, used for wrapping , sauteing, and much more,So I thought about this to make a new difference in this cabbage , as we get tired of eating eat everyday,I added with a twist a combination of western fruit and an Asian vegetable that can be eaten with roasted chicken,barbecue, or even fried foods . This absolutely perfect for summer season, and ,this  would be refreshing and healthy salad.

                             with Lemon Honey Dressing

INGREDIENTS:

                     1 medium size of cabbage ( shredded)
                     2 green apple cut into matchsticks
                     1/2 cup toasted cashew nuts ( roughly chopped)
                     1 small cucumber preferably (English cucumber or Persian cucumber
                                            ( cut into matchsticks)
                 


  For Dressing:

                    1/4 cup extra virgin olive oil
                    1 large lemon
                    2 Tbsp honey
                    salt and pepper to taste


PREPARATION:

                      In a large salad bowl , put shredded cabbage, green apple, cucumber. In  a small mixing bowl , put oil , lemon juice, honey , stir well until combine. Pour dressing over cabbage mix, add salt and pepper, .Toss to combine , top with chopped cashew nuts.


Note: Leftover salad can be put into airtight container and stored in a fridge for 1 day,

WALNUT ROUNDS

      Who likes walnut ?My mother like it very much as walnut is good for her, she has diabetes, and this nut are help to maintain her blood sugar level .But not only walnut can help diabetes patient there is a lot of food that  we eat can help for this diseases ,. Not only that walnut is  a great  source of antioxidant , its also packed with omega -3 fatty acids ,.
And check it out walnut can help us to deal with STRESS - witch we experienced that everyday ,.
'' I have a good recipe  for this delightful nut  , that you would fall in love with the taste of this ' walnut rounds'nutty texture , not to sweet just enough,and if you're looking for crunchy cookies this will be you were looking for.

                          ''WALNUT ROUNDS''

      Ingredients:
                     1 1/2 cup toasted walnut 
                                   1/2 cup ( 1 stick ) butter cut into pieces
                                   2/3 cup white sugar( use splenda for healthy purpose)
                                   1/2 tsp baking soda
                                   1/2 tsp baking powder
                                   1 large egg
                                   1 tsp vanilla extract
                                   1 1/2 cup all purpose flour


         Preparation:

                 Place nuts in food processor cover .Process by pulsing with on/off action                      until paste form ( affair grainy texture).
                Add butter, sugar, baking soda, baking powder, process until combined . Add egg                 and vanilla ;process again until completely combined.Transfer to a large mixing                     bowl cover and refrigerate for 1 hour or until firm.
                Heat oven to 375 F .
                Shape dough into 1 inch ball . Roll in additional granulated sugar. Place ,inches   
                apart ,on greased baking pan or use baking paper for cookie. Flatten slightly with 
                bottom of glass .
                 Baked 10 minutes or until lightly browned .Cool for 2 minutes ;remove from baking pan .
                 Cool on wire racks,



                Makes :40 cookies . Preparation time:1 1/2 hour including chilling  
                                              Cooking time: 10 min.


            Note,and tips'-  I used splenda sweeter for this recipe but regular sugar can taste 
                                     better.

Minced Pie

     


                             Minced Pie (Filling Recipe)



      Who said we can't have minced pies before Christmas today I made this minced pies .I used my buttery crust ,and the filling was really easy to make .And one thing you don't need so many variety of dried fruits, to make this incredible minced pie filling.,Use whatever available fruits you have in your house , If you don't have fresh orange you can substitute marmalade preserve or jam its perfect for this minced pie filling. So,you can enjoy minced pie even  Christmas has a long way to go .,but still you can have a feast for this little cute pies ever ,,  everyday is  Christmas day.'Try this mini pies , perfect for tea time , or even dessert.

                         '' MINCED PIE FILLING'

  INGREDIENTS

                 3 Gala apples ( cut into small cubes )
                 1 cup dried prunes  ( cut into small cubes)
                 1 cup golden raisins
                 1/2 cup orange marmalade
                 1/2 cup white sugar
                 1/2 cup light or dark corn syrup
                 2 tbsp dark rum
                 3 tbsp ruby port ( or brandy)
                 2 tbsp Cointreau( any brand or orange liquor)
                 2 cups cranberry juice ( or orange juice )
                 1 tsp cinnamon powder
                 1 tsp allspice


PREPARATION
           
           In a large sauce pan , combined all the 12 ingredients , cook in a moderate heat , stirring every 15 minutes . Cook pie filling for about 1 1/2 hour. Cool filling completely before filling in into prepared pie dough. For minced pie dough you can use regular pie dough for easy convenient cooking.




Note: In this recipe I used ruby port because it enhanced and gives more flavor to the fruits . I also used orange marmalade with this recipe, because marmalade is already concentrated taste of  orange , I also made my own marmalade so I have faith on it to add to  this minced pies filling.


Serving : 30 to 40 mini pies      Preparation time : 15 min     Cooking time: 1 1/2 hour

Buttery Pie Crust




Here is my one favorite pie crust ever.''
BUTTERY PIE CRUST FOR ANY KIND OF PIES

      















I like this pie crust ,because you will absolutely, can taste the butter, fluffy crusty crust ever,.You can use this for any kinds of pie recipes,like apple pie is so good with this crust, fantastic partner ,or even Lemon meringue pie, or banana cream pie.etc. With this pie crust will bring your pie into spotlight''.


















There are some recipes for pie crust , you can add some nuts ,grated coconuts,cheese , or whatever you liked, but this kind of pie crust I called this a Universal pie crust, because it can really  goes well for any variety of pie recipes.


In this pie crust I used.,

2 cups of all purpose flour
3/4 cup chilled unsalted butter cut into cubes ( if using salted omit salt)
1/4 tsp salt
1 tsp white sugar
1/4 cup ice water


Preparation

In a large mixing bowl combine all dry ingredients ,stirring until well combined. Add butter ,using pastry blender or your finger cut butter into dry ingredients until in pea sized for about 5 minutes.
Drizzle ice water ,stirring then, mix together until it form a dough ball.( Don't overwork the dough or it'll become tough.)
Shape your dough in your pie plate ,using fork prick  pie dough as you can about 30 to 50 prick so you're dough doesn't  pop up when you baked it.,cover with plastic wrap then chill for about 15 minutes just to set the dough before baking.
If the dough needed to be bake before putting the pie filling , bake your dough in a moderate oven temperature  (350-375 F) bake pie for  about 15 to 25 minutes until the pie edges lightly browned.


*You can also freeze this pie crust for the next future use.

MY LUNCH TODAY "vegetable cabbage rolls'"

                                     



  "vegetable cabbage rolls"this is made of variety of  vegetables such as , carrots, jicama, shiitake mushrooms ,bamboo shoots, and napa cabbage, seasoned with oyster sauce, a little bit of sesame oil which I  really like '' and added with it freshly chopped cilantro, I like this herbs its has a strong aroma ,and a refreshing taste , its really goes well this cabbage rolls .  I made this  quick meal if ever  I goes out and need something to eat fast.And one thing I like this rolls is no need sauce to go with it ,its  moist inside and well seasoned, also  vegetable was half cooked so still the crispiness of vegetable are intact .
 This kind of quick meal will relieved your hungry stomach,not only that this meal is healthy. So if ever you need a fast and easy meal for lunch or even for breakfast ,or dinner this is perfect to make .
I strongly recommend this ,


Steamed tofu with Asian sauce

Ingredients
                      
                  1 package of soft firm tofu
                  3 cloves garlic roughly chopped(fried until crisp)
                  2 tbsp roasted salted peanuts roughly chopped
                  1 stem of leeks or spring onions chopped 
                   
       For the sauce 
                  3 tbsp light soy sauce or regular soy sauce
                  1/4 cup water 
                  4 tbsp brown sugar
                  1 glove of garlic minced 
                 freshly ground black pepper 
                   1 tsp cornstarch 



Cooking time

                Drain tofu very well, wrap tofu in a aluminum foil. In a medium steamer steam tofu for about 10 minutes.While tofu is steaming prepare the sauce.In a small sauce pan combined soy sauce,water , sugar,minced garlic, black pepper.Bring to boil for about 3 minutes ,while boiling add cornstarch stirring until combined and sauce has thickened remove from the heat.Fry chopped garlic until crispy drain with paper towel set aside for toppings.
Transfer steamed tofu into chopping board sliced tofu into two  portion by slicing it lengthwise.Slice one portion diagonal  for about 9 to 10 sliced square. Transfer sliced tofu into desire serving plate,pour some sauce , sprinkle some chopped peanuts ,fried crispy garlic,spring onion .Served immediately.



Serving: 1 -2                    Preparation time:  10  minutes          Cooking time:  15 minutes 




'''''' This is a vegetarian dish , either your not a vegetarian you will love this tofu dish ,,tofu is high in protein  and calcium.You may also choose whatever  sauce you liked for you're own tofu.I made this to one of my  customer she ,is in dieting period .,and she was surprised of this tofu dish,the smooth tofu texture, sweet and salty sauce,with crispy garlic sounds delicious .
