French Onion Soup

                              French Onion Soup

Not everyone like onion , because of the strong aroma of it, but for those who loves 


onion well I can say this is for you ,Tasty,light, and cheesy flavor , top with french bread yummy dinner or lunch or even brunch.








INGREDIENTS:


  • 4 large white onions 
  • 1 tbsp flour 
  • 1 tbsp butter 
  • 1 tsp olive oil 
  • 4 cups beef broth less sodium 
  • 2 spring of thyme 
  • 1 tbsp  brandy 
  •  salt and pepper to taste 
  • 1/2 cup parmesan cheese 
  • 1/2 cup mozzarella cheese 
  • 4 sliced of french bread 


PROCEDURES:
In medium sauce pan , let the onions caramelized in butter and oil, until lightly browned and transparent.
Add the beef broth, thyme ,and brandy let it simmer for about 5 minutes until lightly creamy .
Add salt and pepper to taste .
Transfer soup into prepared individual baking soup bowl.
Sprinkled parmesan cheese over soup then add , mozzarella, top with french bread the add more parmesan cheese over the bread.
Do the same process to the another bowl. 
Bake  350F for 15 to 20 minutes.
Serve immediately .

Semi Sweet Chocolate Pound Cake with Ganache Frosting

                  
               Semi Sweet Chocolate Pound Cake

           Here is my version of Chocolate pound cake , this is rich and delicious 
good to have this for afternoon tea. Anyway very easy to do. Make sure you got chocolate in your pantry.



ingredients:

  • 1 1/2 cup semi sweet chocolate
  • 1 1/2 cup all purpose flour
  • 1 tbsp baking powder 
  • 1/8 tsp salt 
  • 1 stick butter softened 
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract 
  • 1/2 cup cream or milk , ( i used half cream and half milk )

baking time:

  • Have melt the chocolate in a double broiler pan , let it cool at room temperature 
  • Combined flour ,baking powder. salt.Set aside 
  • In a large mixing bowl ,cream butter and sugar until nicely creamy, add egg one at a time , add vanilla extract. 
  • Add dry ingredients then pour milk, mixing slowly until well combined and no laps left.
  • Pour the mixture into 8 inches prepared greased pound cake pan.
  • Bake for 30 to 40 minutes until toothpick inserted comes out clean.
  • Coo for frosting. 

Chocolate Ganache :
  • 1 /2 cup cream 
  • 1/4 cup butter 
  • 1/2 cup semi sweet chocolate 

PROCEDURE:

Combined all three ingredients have it all melts in a double broiler ,until melted 
Let it cool for about 30 minutes or put inside the ref , 
Ready for frosting .
Pour ganache over the cake slowly.

Add a twist in your apple muffins ,to make more delicious and mouthwatering impression.Here in this recipe I made my own almond topping, crunchy on the top, and muffins are moist and soft, not to sweet just enough to blend with the topping .
So try making this muffins , its very easy to make this recipe .Make your simple muffins into special one.

Ingredients:
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1  1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 Tbsp cinnamon powder
  • 1/2 cup butter softened
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3/4 sour cream or all purpose cream
  • 2 cups diced fresh apple (peeled)
  • 12 cupcakes paper cups

Baking time:
Preheat oven 175 C or 375 F
Prepare the muffin pan ,fill in the paper cups.
In a medium mixing bowl combined all dry ingredients using wire whisk mix it well.
In a large mixing bowl, cream butter and sugar until fluffy,add eggs one at a time.Add vanilla, then add the half of the dry ingredients ,slowly pour the half of the sour cream,then add the remaining flour mixture,then sour cream.Fold in the diced apple to the batter mixture until well combined.
Fill in  the 12 muffins paper cups.
Bake it for 20 minutes, then take it out from the oven, topped with almond butter , and sliced almond , Put it back in the oven ,then bake it for another 5 to 8 minutes.


Homemade Almond Butter
  1. 1/2 cup ground almond (crumbly ) not to fine
  2. 1/2 cup butter softened 
  3. 1/2 cup brown sugar
  4. 1 egg plus 1 egg yolk

In a medium size mixing bowl, cream butter and sugar , until fluffy then add the eggs whisking , then add the almond .Ready for future use.
Leftover almond butter can be stored in the freezer for 2 weeks .

Here is my Caramelized Fried Banana, recipe.If you are a fan of 'banana' then you will enjoy this sweet. satisfying snacks or even for dessert. There is nothing more you need this yummy sweet banana, it does not required a lot of ingredients, well anyway its obvious its only banana, and sugar.
So cooking time ,''''






All you need is find this kind of banana called''''''MUSA (SABA) it has a little bit difference between the regular banana, but saba is mostly used for cooking .Anyway you can find this in the supermarket.

Ingredients:
  1.  Saba-5 pieces 
  2. 1/2 cup brown sugar
  3. canola oil for frying 
Cooking time:
  1. Heat frying pan.Make sure the oil is hot before frying.
  2. Peel off banana skin,and cut into two .
  3. Fry banana until lightly browned .Set aside.
  4. Now here is the trick how to caramelized very quick in one pan.Do not turn off the fire.While the oil is still hot add the sugar ,wait until sugar is melted do not stir,then add back the fried banana into frying pan with a low fire.
  5. Stirring slowly until all the banana is coated with this melted sugar. (be careful hot oil plus melted sugar is extremely hot).
  6. Transfer caramelized banana into your prepared plate.ENJOY

  • Use canola oil for frying 
  • Recommended to eat it while is freshly made.
  • Do not use over ripe banana, it will absorbs to much oil.

 Chicken breast has nothing much taste , so we can make a good dish 
 to make it delicious there is many  different cooking for chicken breast You can have it stuff with ham and cheese and fry or baked like stuff with crispy bacon with garlic butter. what i did , this dish I baked it and you can enjoy it itself without anything side dishes with it , it feels your eating a lasagna. Anyway you can try making it  you know how delicious it is. The chicken is not dry, moist still, plus , this yummy sauce and a melted cheese on top. Perfect for dinner pair with your favorite wine ,and set back and enjoy. 




INGREDIENTS:
  • 4 PCS, Chicken fillet, flatten  1/4 inch
  • 2 eggs lightly beaten 
  • flour and bread crumbs for coating the cutlets
  •  1/2 cup parmesian cheese
  • 1/2 cup mozzarella cheese
  • olive oil for frying
  • parsley for garnishing
FOR MARINARA SAUCE

  • 3 cups fresh chopped tomatoes
  • 1 can diced tomato
  • 2 tbsp chopped red onion 
  • 1 tsp minced garlic 
  • 1 tbsp olive oil
  • a handful of fresh basil chopped 
  • 1 tsp hot sauce 
  • 1 tsp sugar
  • salt and pepper to taste 
  • 1 tsp Lea Perrins (worcestershire sauce
PROCEDURE:
In a medium sauce pan,put all the ingredients together and let it boil for about 5 minutes, the set the fire on low heat , let it simmer for about 25 to 30 minutes.Remove from fire then set aside for future cooking needs.




PROCEDURE FOR COATING THE CUTLETS:
  A dash of  salt and pepper to the chicken cutlets, coat enough flour the cutlets, dip it into the eggs, then coat with bread crumbs .Repeat the procedure until all the chicken all coated.




Cooking procedure:
Preheat oven 375F 
In a large frying pan put olive oil , fry the breaded chicken 2 minutes for each both side.
In a baking pan , put all the fried chicken ,add marinara sauce on each top , add mozzarella cheese ,parmesian cheese, then parsley.
Bake for 10 minutes until the cheese has melted but not burn.

  
Prep time:45 minutes 
Cooking time: 15 minutes 
Serving: 4 person

#NOTES;
 Do not over fry the chicken, it might be too dry when you baked it.
Marinara sauce should be,creamy but the watery.

Banana Cup Cakes with Lemon Cream Cheese Frosting

Banana cake or muffin  is very friendly to any kinds of frosting and filling, like peanut butter frosting, chocolate, and etc, I thought about the Lemon might be good to  my frosting ,and it comes out perfectly taste good.
The sweetness from the cake and creamy taste of cheese, added to it is the lemon, refreshing taste cakes ever ,also  lemon helps you get all the flavors you need., Banana is also absorb flavor like tofu.   


ingredients:
  1. 2 1/4 all purpose flour
  2. 1 1/2 tsp baking soda
  3. 1 tsp baking powder
  4. 1/4 tsp salt
  5. 1 cup softened butter
  6. 1 1/4 white sugar
  7. 2 eggs whole + 2 egg yolk
  8. 1 tsp vanilla extract
  9. 1/4 tsp banana flavoring (optional) 
  10. 1 1/2 cup mashed ripe banana
  11. 1 cup fresh milk with 1 juice of lemon ( added to fresh milk )
  12. 24 pcs , paper cup cakes 

 procedure:

Preheat oven 175 C or 375 F .
Combined all dry ingredients
In a large mixing bowl , cream butter and sugar until light and fluffy.add eggs and yolk, stirring ,add vanilla extract, banana flavoring ( if using). Then add mashed banana,stir , then add half of the dry ingredients, pour half of the fresh milk (instant sour cream). and stir, lastly add the half of the dry mixture followed by the half of the fresh milk. Mixture will be smooth and light , Do not over stir.
Fill in  24 paper cups .Bake for 20 to 25 minutes until lightly golden browned..Cool completely 
before frosting ,


for lemon and cream cheese frosting
  1. 4 oz cream cheese 
  2. 1/2 cup softened butter
  3. 1 Tbsp lemon juice
procedure:
        
   Combined all 3 ingredients well. 
   Frosting can be made ahead , just keep it in the refrigerator .


Yield: 24 cup cakes
Prep;35 minutes
Baking time : 25 minutes

Mango Cake with Lime Glazed

                           Mango Cake with Lime Glazed



                    Its always nice to eat freshly baked cake in the afternoon or snacks .
                    Made this nicely fluffy mango cake , moist inside ,and light .Added with 
                    it is the lime glazing makes the cake taste more fresh.



ingredients:

  • 2 cups all purpose flour 
  • 1 cup white sugar
  • 1 stick butter
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 1 cup mango puree (2 ripe mango but not to soft)
  • 1 Tbsp brandy
  • 1 tsp vanilla extract
  • 1 cup fresh milk + 1 juice of lemon (add to milk)


 procedure:
         Preheat oven at 175 c or 375 F , Greased 8 inch's spring form baking pan, set aside.Combined all dry ingredients. In a large mixing bowl cream butter and sugar, until fluffy and light color, add eggs one at a time,then add brandy , vanilla extract,followed by the mango puree.Add dry ingredients into batter mixture , pour slowly the fresh milk with lemon (it would be sour cream )stirring slowly until the mixture well combined .Do not over stir.
Pour mango cake mixture to the baking pan, . Bake for 1 hour to  20 minutes until golden browned .Cool for 5 minutes . then glazed (lime glazed).


for the glazing:
  • Lime zest 
  • juice of 1 lime 
  • 1/4 or 1/2 cup powdered sugar

procedure:
Combined all 3 ingredients together . Ready to glaze 


Serving:8 person           Prep: 1 1/2 hour               Baking time:1 hour 20 minutes
